Chicken Quesadillas with Avocado:

8 Flour tortillas

500g Carol’s Fresh Roast Chicken Meat

50g rocket or baby spinach

1 large avocado, sliced

1 cup grated tasty cheese

2/3 cup sun-dried tomatoes Sour Cream

1. Preheat toasted sandwich maker.

2. Divide the chicken, spinach, avocado, cheese and tomatoes equally over 4 of the tortillas.

3. Season with black pepper.

4. Sandwich with remaining tortillas

5. Toast in sandwich press until cheese is melted and the filling is heated through.

6. Serve with sour cream.
